  • 12 ounces rigatoni pasta
  • 2 tablespoons unsalted butter

  • 1 cup heavy cream
  • 3/4 cup chicken broth
  • 1 cup shredded low-moisture mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon remaining Cajun seasoning, plus more to taste
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1/3 cup reserved pasta water, as needed
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the rigatoni until al dente according to the package directions. Reserve about 1/3 cup of pasta water, then drain the pasta.

  7. Combine: Add the drained rigatoni and toss until every piece is coated. Stir in a splash of reserved pasta water if the sauce is too thick.
