Three-Cheese Broccoli Rigatoni
- 12 ounces rigatoni
- 3 cups broccoli florets
- 2 tablespoons butter
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Pinch of red pepper flakes, optional
- 2 tablespoons chopped parsley
Instructions
- Bring a large pot of salted water to a boil. Cook the rigatoni until al dente. Add the broccoli during the final 3 minutes. Reserve 1/2 cup pasta water, then drain.
- Pat the chicken dry. Season both sides with Italian seasoning, smoked paprika, salt, and black pepper.
- Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Cook the chicken for 5–7 minutes per side, or until golden and the center reaches 165°F. Transfer to a plate and rest.
- Lower the heat. Add the remaining 2 tablespoons butter and 4 minced garlic cloves. Cook for 30 seconds, then spoon the garlic butter over the chicken and sprinkle with parsley.
- For the sauce, melt 2 tablespoons butter in a large pan. Add 2 minced garlic cloves and cook for 30 seconds. Whisk in the flour and cook for 1 minute.
- Slowly whisk in the milk and heavy cream. Cook for 3–5 minutes, stirring, until slightly thickened.
- Reduce heat to low. Stir in cheddar, mozzarella, Parmesan, Italian seasoning, optional red pepper flakes, salt, and pepper until smooth.
- Add the rigatoni and broccoli. Toss until coated, adding a splash of reserved pasta water if needed.
- Slice the chicken and serve beside or over the creamy pasta. Spoon extra garlic butter on top and garnish with parsley.
